Puteus Salice Salentino DOP Reserve of the Mocavero Winery is produced from grapes from vineyards located in the municipalities where the Salice Salentino DOP in Puglia falls. The vineyards are located in Salice Salentino, Veglie and Guagnano (Lecce), San Pancrazio Salentino and San Donaci (Brindisi) and in the territories of the municipalities of Campi Salentina (Le) and Cellino San Marco (Br).

The soils are of a clayey-calcareous type and the vineyards are bred with the traditional Salento methodology of Apulian sapling. PUTEUS is made from 80% Negroamaro and 20% Black Malvasia of Lecce grapes. The grapes are harvested by hand in the second decade of September, followed by the classic red vinification. During this last phase, the contact time between pomace and the must is prolonged so as to allow a greater extraction of coloring, aromatic and tannic substances. This is to ensure that the wine is well structured for aging. Afterwards, the marc is separated from the liquid part (wine must). This is combined in stainless steel tanks to complete the fermentation process. Once fermentation is complete, the wine is separated from the lees and stored in steel tanks for the first year. PUTEUS completes its aging cycle in oak barrels. Finally, it is stabilized, filtered and bottled.

Puteus in the glass presents deep red color with hints of violet, on the nose it presents aromas of small red fruits, and a strong spicy bouquet. In the mouth the taste is extraordinarily rich with notes of cocoa and coffee, fruity such sour black cherry in alcohol. Long harmonious and fragrant finish.
